Orange Juice Powder
Orange Juice Powder is orange juice with the water taken out, and nothing else.
It tastes like the sweet middle of a glass of OJ: round and fruity, with very little of the acidic bite you get from fresh juice. Because it's dry, it brings orange flavour to a recipe without adding any liquid.
Use it in a rub for watery veg like zucchini without making it soggy. Stir it into buttercream or a sugar glaze, and you won't thin it out. Work it into shortbread, cake batter, or a dry rub for pork shoulder and duck. Behind the bar, mix it into rimming sugar or a zero-proof syrup.
Two things to know on the line. Its natural sugars caramelize, which gives good color on roasted and grilled proteins, so watch it over high direct heat. Like any fruit powder, it also pulls moisture from the air. Keep the lid tight between uses!
