Furikake

Furikake means sprinkles in Japanese. Ours is toasted white and black sesame, nori flakes, kosher salt, and a touch of cane sugar. Five ingredients, nothing filling space. The flakes are large enough to read across the pass. And that's the point, friends. This is the last thing that happens to a plate before it leaves your kitchen, and it should look like a garnish, not a dusting.

Where it works

Poke and rice bowls. Fried chicken, right out of the fryer while the crust is still tacky. Noodles, hot or chilled. Fried eggs, avocado toast, roasted sweet potatoes, popcorn at the bar. Salmon takes it well, and so does anything you'd otherwise finish with plain sesame.

How to use it

Add it at the pass, not in the pan. Nori's aroma is delicate and fades under sustained heat, and toasted sesame has nowhere left to go before it turns bitter. Both hold beautifully on a hot plate for the thirty seconds that matter. There's kosher salt in the blend, so season a touch lighter upstream and taste before you correct.
